Blogger Christmas Cookie Exchange

December 11, 2015 By Shelley 2 Comments

More than Curds and Whey for Christmas

I’m not gonna lie my friends

When Santa shows up at this house each year, there’s a good chance he isn’t super excited about what he finds waiting by the tree…

Gluten Free Cookies and Kefir for Santa

Most years, it will be something like fruit-infused water, gluten free cookies and a jug of organic Kefir.

Along with a few carrots and a scoop of granola he no doubt feeds to his reindeer.

It’s just how we roll around here.

Infused Water and Kefir for Santa

But when the lovely Barb from The Everyday Home sent out invitations to join her in a Virtual Cookie Exchange, I knew I’d have to kick it up a notch…

Virtual Cookie Exchange with Some Favorite Bloggers

Welcome!

Virtual Christmas Cookie Exchange

If you are joining me from The Everyday Home’s Cookie Exchange, I’m so happy to have you stop in for a visit.

I know it is a super busy time of year for y’all.

Which is how I happened to decide on what cookie recipes to share today…

While later this month I will be sharing some of the fancy pants cookies my crew makes each year, I thought I’d focus on a few quick and easy ones today.

For situations like when friends from your art group asks you to bring a cookie tray…the night before. Or your favorite little people have a snow day and want to paint and eat real cookies — not the GF ones.

So here are two recipes you can whip up faster than Santa can shoot down the chimney…

Quick and Easy Holiday Cookies

Holiday Dessert Pizza

Don’t you just love a recipe that only has 3 ingredients plus candy and sprinkles?

Making Holiday Cookie Pizza

Grab yourself a roll of cookie dough (I used chocolate chip but peanut butter works too), a cup of peanut butter and two cups of chocolate chips. And whatever treats you like for the top.

Let the cookie dough soften just a bit but don’t get too crazy and leave it out all afternoon. It does have eggs in it…

Crank the oven up to 350 while you are assembling what your kids will think is a masterpiece.

Creating Holiday Cookie Pizza

Press the dough evenly in the pan…

I use two different round cake pans because we like ours a little thicker. But a pizza pan will work just fine too.

Depending upon what kind of pan you use, the bake time will be anywhere from 10 minutes to 40 minutes.

Holiday Cookie Pizza to Go

While the cookie is baking, melt the chocolate and the peanut butter together.

We are chocoholics so I use two cups of chocolate chips and one cup of peanut butter. Your family might like more PB!

I melt these in the microwave in 30 second increments. We all know that scorched taste chocolate gets if you try to rush this process…

Topping for Christmas Cookie Pizza

Blend it together well… And try to patiently wait for your cookie to bake.

Christmas Cookie Pizza

Spread the topping on the cookie while it is still hot and add your peeps favorite goodies!

Our crew is loving peanut butter M&M’s and orange and yellow sprinkles at present. That will likely change by tomorrow.

That’s it! One quick and easy recipe kids will love for any Christmas event…

Reese’s Cup Cookies

As promised, here is the second quick and easy holiday cookie.

And yep… it only has 4…count ’em… 4 ingredients and one is miniature Reese’s cups.

Making Reese's Cup Cookies

Here’s what you need for each dozen yummy little cookies:

1 cup of peanut butter

1 cup of sugar

1 egg

12 miniature Reese’s cups with wrapper removed

(That last part is for the folks who need a warning label not to use their blow dryer in the bathtub. Just sayin’.)

Blogger Cookie Exchange

Set your oven to 350 to warm up…

Combine the peanut butter and sugar.

Blend in the egg. It will take some girl power to blend it in well.

Then roll the batter in to little balls and drop them in to a mini-muffin pan.

Holiday Cookie Exchange

Bake the cookies for about 10 – 15 minutes. Until they are golden brown and no longer “jiggly.”

Immediately press the Reese’s cup in to the cookie after you remove the tray from the oven.

Making holiday cookies

Let them cool in the pan about 10 minutes or so.

You want them to set up before you try to remove them.

Ta-da!

Two different types of cookies in well under and hour…

Your welcome busy moms and treat loving kids…

Pour yourself a glass of Almond Milk or a cup of homemade raspberry Kefir (I know… some habits die hard!) and ENJOY!
