My entire family is made up of crazy sports addicts…
If we didn’t all look so much alike, I may think I was switched at birth y’all.
Even the littlest of peeps can talk line of scrimmage…
Then there is me… the gal who was bored by half time at the Rose Bowl game and ready to head back over to the parade route and see the floats again.
This year, after several years of breaking hearts, our Michigan Wolverines are back in the game!
If I weren’t so superstitious (another trait passed on by my sports-loving crew), I would share the stats and the excitement everyone is feeling.
So I thought it would be a great time to share a few fun tailgate treats!
Today I will share some delicious but potent Chocolate-Coconut Pudding Shots.
Then later this week my favorite mason jar treat: Pumpkin Spice Cakes with Italian Ice Frosting.
Are you ready?
Tailgate Ready Chocolate-Coconut Pudding Shots
Don’t you just love a recipe that has only four ingredients?
Me too!
A word of warning… these pudding shots are potent!
You could easily dial the alcohol back by half…
Chocolate-Coconut Pudding Shots
*This recipe makes about a dozen pudding shots*
3/4 cup Kahlua
3/4 cup coconut rum
4 oz. Cool Whip (I just the reduced fat and it tastes just fine!)
Small package of Mounds instant pudding mix
Whisk the Kahlua and instant pudding together until thick. It only takes 2 or 3 minutes.
Add the coconut rum and whisk again.
Then add the Cool Whip. Whisk until the lumps are gone.
I found fun mini red Solo cups to use… aren’t they the cutest?
I’d say fill them only half way up… unless you are cutting back on the booze!
Another tip?
Be careful not to get the pudding on the sides of the cup. It makes them look a little messy…
And be careful not to trip while walking them to the freezer like I did… that’s even messier!
I place them in a covered, plastic container since they don’t have lids.
Then stick them in the freezer overnight….
And you are done until game day!
If those Pumpkin Spice treats look yummy… its because they are!
And they are free from eggs and oil y’all!
Subscribe to my blog if you don’t already so you don’t miss the recipe and a behind the scenes peek at making them!
GO BLUE!!!
