For summer and fall picnics they have seem like such a great idea!
Tailgate parties too…
So I decided to take my favorite fall cake and turn it in to individual Tailgate Party treats…
One of the great things about this cake is it is egg and oil free!
I add my little momma’s Italian Ice Frosting to it and it is delicious y’all….
Pumpkin Spice Mason Jar Cake – Yummy Tailgate Treats
Two ingredients is all the cake takes!
A spice cake mix and a can of pumpkin (not pie filling but pumpkin)
Put both ingredients in the bowl and mix it up good…
I used the petite mason jars and fill them about 1/3 to 1/2 full…you can make about 8 or 10 treats with this recipe.
Another tip is to use a wet paper towel to clean the insides of the jars…
Because you can see all the way through the jars above the cake and frosting, you want to keep ’em clean!
Some folks set the jars right on the oven rack and others set the jars in a pan of water…
I decided to land in the middle and use a pan but no water in it.
Because the batter is so dense, it is a little tricky to bake them.
I found baking them about 15 minutes at 350 degrees and then turning the oven up to 375 for about 10 minutes works best.
But your oven may be different. I used the toothpick test to make sure they were done.
Italian Ice Frosting for Mason Jar Cakes
This is my little momma’s recipe for frosting. She uses it every Thanksgiving on her famous Carrot Cake. She even has one of those old-fashioned grinders that she and Pops use to hand grind the carrots.
Just like the cake… the frosting is super easy and super scrumptious!
1 stick of softened butter (the real stuff with salt)
1 – 8 oz softened cream cheese (I use the reduced fat version)
1 pound of powdered sugar
1/2 to 3/4 cup of chopped pecans
Mix the butter and cream cheese until smooth. You can use a mixer if you’d like, but I do it by hand. You just need to make sure the cream cheese is really soft. Then work the powdered sugar in slowly.
Finally, add the vanilla and the pecans.
Once the jars are cool, its time to add the frosting.
It’s tough to use a pastry bag because this frosting is pretty thick. I find a little spreader works best.
Because I wanted these for a party made up of all Michigan fans, I ordered these spoons on Etsy
I’m sure you could use any old plastic spoon you wanted but these worked for me!
I found tying the twine on to the spoon and then tying it on to the jar worked best…
That’s it! You have a tailgate ready treat…
